In the beginning, there was pizza…
Our family’s passion for woodfire pizza ignited after our dad built his first woodfire oven at Mirror Lake near Kaslo, BC. His growing obsession for the perfect crust coupled with our family pizza competitions resulted in pizza so good, we knew it had to be shared.
The Rustic Crust was established in 2012. As a family, we sold our woodfire pizza at local markets and community events and built the East Trail back alley kitchen where we grew our business with take-and-bake pizzas and catering.
Our new bistro concept was designed along the Columbia River by Gyro Park with the intention of injecting culture and sharing into our community.
At The Rustic Crust by the Park, we do what we do because we love it. Come be a part of our story as it continues to evolve along the beautiful Columbia River by Gyro Park in East Trail.

9” x 12” Roman style Woodfire Pizza. One pizza feeds 1 to 2 people on average.
What’s Roman style pizza?? It’s our signature sheet pan crust topped and woodfired to absolute perfection!
Our pizza dough is prepared from scratch daily and topped with locally sourced, fresh ingredients resulting in a potential to sell out or subject to availability. We welcome pre-orders by phone at 250-512-0974. Prior to ordering, please let us know if you have any food allergies or sensitivities.
BAKING INSTRUCTIONS: oven rack at mid-height, pizza directly on rack
400 degrees for 10 min, broil 1-2 min till golden brown
BAKING INSTRUCTIONS FROM FROZEN: 360 degrees for 16-17 min, broil as needed

In 2018, Tim travelled to Italy with the goal of returning with the technique, equipment and ingredients of authentic Italian gelato for Trail and the Kootenays. Our gelato and sorbettos are hand-crafted in-house, every flavour, every batch.

Gelato is the Italian word for ice cream. Gelato is milk-based while ice cream is cream-based which means gelato contains much less fat. During production, gelato is churned at a slower speed than ice cream resulting in a dense, smooth, and silky texture with no added air in the final product. Gelato is an artisan product with fewer, more natural ingredients and less added sugar.
